Ingredients (for 2 people):

  1. 5 types of vegetables – 300 grams
  2. Coconut – 4 to 5 pieces
  3. Cumin seeds – 3/4 teaspoon
  4. Green chilly – 1 or add as per its spicy level
  5. Curd – 1/2 cup
  6. Mustard & Urad dal – 1/4 teaspoon
  7. Curry leaves – 1 spring
  8. Rock salt – as per taste


Method:

  1. Take any 5 types of vegetables based on your choice (For example: Carrot, Green Beans, Drumstick, Ash Guard, Broad Beans, Brinjal). 
  2. Cut all the vegetables lengthwise in the same size. Transfer the vegetables to a bigger bowl and place it on a stove. Cover it with a lid. Open the lid after 2 to 3 minutes and check the water level of the vegetables. These vegetables contain water by nature. So it will cook on its own without additional water. Keep stirring every now and then. Sprinkle little bit of water only if the vegetables stick to the pan. Turn-off the stove when all the types of vegetables are completely cooked and keep the bowl aside.
  3. In a mixie/blender jar, put Coconut pieces, Green Chilly & Cumin seeds. Add very little water and grind the ingredients. Make a coarse paste. Mix this paste in the vegetable bowl. Add curd & Rock salt.
  4. Place another dry pan on the stove. When it is hot enough, put Mustard seeds & Urad dal and let it splutter. Turn-off the stove and transfer these items to the vegetable bowl. Add Curry leaves on top of it. Mix all ingredients once again. Adjust the salt and it is ready to eat now.

Note:

  • I learnt this oil free recipe from Life Natural workshop.
  • Always make sure to add Coconut paste & salt only after the vessel is removed from the stove.
  • Aviyal can be a side dish for Chapati (wheat roti). It can be used as one of the side vegetable for rice & sambar combo as well.
